Calories and 40/30/30

For frequently active individuals, ~2500 calories is generally the amount burned.
So, break even point would be 2500, and what I read said that about an intake of 1800 would be a target for weight loss

Well, I understand the basics of calories, at least from what I've been told.
Basically, if you intake more calories than burned, you'll gain weight. But if you use more than taken in, you'll keep your weight or lose weight, depending on how much.
What're the more physiological things behind them? How exactly do they work?
What are they needed for and what do they do?

And as far as the 40%carb,30%protein,30%fat thing goes, at 2500 burned calories on average, it puts me at
250 grams of carb
188 grams of protein
84 grams of fat
(I found this through a calculator for the 40-30-30 diet)
What are the major benefits to this diet?
And, if I were to, for example, hit 2500 calories intake (somehow), but not have fulfilled the 40/30/30 amounts, it'd be in my best interest to don't worry as much about the caloric and care about the 40/30/30?

I'm just slightly confused in general about the whole thing. Any input and information, or links, or anything would be awesome.
