Hmm... Well, after spending an hour reading the SS Wiki, I have decided to begin with "The Original Starting Strength Program".

I will be posting some videos of my form and the equipment I will be using. Since my weights don't spin, should I not do PC's, or should I just take that into account and be prepared for it?

It should be fine with weights that dont spin. It's not like you're power cleaning upwards of 225 or more and have tohave the bar spin.

If I workout on Wednesday, but then I have a jam on Thursday, what do you guys advise? Should I skip Wednesday or Friday, or should I go light on Friday? Is it not a big deal since it's one day extra?

Don't overwork yourself on thursday. Work on coordination, jumping economy, movement and any other skills that need work. Like I said, just don't be tired after it. LIGHT.
