I'm not sure what you're asking in your post. It seems you are not sure how to train and you are also not sure how to cope with stress. My advice to you for both is, slow down.

It sounds like your parkour training is going fine, as far as getting the roll down and also working on movement vs. moves. Just keep doing what you're doing. As you get more familiar with moving through your environment, you will discover strengths and weaknesses in your training and these will give you some ideas for training goals, which will shape your training practice. So just keep doing what you're doing, and pay attention to it, and address those goals as they make themselves known to you. Let your training unfold as it will.
As to the stress, it may be that you will have to let some things drop. There are only 24 hours in a day, and you need to prioritize what is most important to you. Nothing in life is worth getting terribly stressed over, so you may have to accept that there are some things you may need to let go of to make more room in your life for serenity.
